This exopolysaccharide has important gelling, thickening, and rheological properties for the food and medical area. As in all fermentative processes, dextran production is affected by environmental conditions such as pH, temperature, and substrate, as well as the producing strain. Therefore, the aim of the work was to predict the effect of the μmax of thirteen Leuconostoc mesenteroides strains on their cell growth, substrate consumption, and dextran production in fermentative processes. The results showed that the simulation is a valuable tool to visualize kinetic behaviors and to be able to find and select the optimal parameters to execute real fermentations with successful results.Las fermentaciones son procesos bioquímicos en los que bacterias transforman sustratos en productos y metabolitos de interés comercial. Las bacterias ácido-lácticas (BAL) son microorganismos que producen ácido láctico a partir de fructosa y glucosa, sin embargo, al cultivarse en medio con sacarosa el producto principal es el dextrano. Este exopolisacárido tiene propiedades gelificantes, espesantes y reológicas importantes para el área alimentaria y médica. Al igual que en todos los procesos fermentativos, la producción de dextrano se ve afectada por las condiciones del medio como el pH, temperatura y sustrato, y además la cepa productora. Por lo anterior, el objetivo del trabajo fue predecir el efecto de la μmáx de trece cepas de Leuconostoc mesenteroides en su crecimiento celular, consumo de sustrato y producción de dextrano en procesos fermentativos.
