Resumo:This dissertation sheds light on the impact of emotions on consumer behavior within culinary contexts. Comprising three chapters, the research presents a holistic exploration through lab experiments and field studies. Chapter 1 introduces a novel approach by studying the role of emotions—specifically anger and fear—on food choices. Emotions’ effect on familiar and unfamiliar foods and preferences for open versus closed kitchens is examined. The findings illuminate the interplay between emotions, appraisal, and culinary preferences, underscoring the need for advanced emotion induction methods. Chapter 2 explores emotions' influence on taste perception at Alchemist, one of the best restaurants in the world, with its pioneer holistic cuisine. This study transcends prior methods by integrating emotions directly into the dining environment, and offering a more ecological approach. The results reveal significant influences on various taste dimensions, highlighting emotions' considerable effect on taste perception. In Chapter 3, the research delves into the emerging notion of 'emodiversity', investigating its significance on consumer experiences within culinary settings. Three studies involving sommeliers and Michelin star restaurants, demonstrate emodiversity's impact on enhancing consumer satisfaction, which underlines its previously underexplored importance in understanding consumer behavior. With its substantial implications across culinary arts, restaurant industries, education, and policymaking, this dissertation aims to contribute to the future terrain of consumer experiences and food ecosystems. It endeavors to inspire innovative resources, cultivate harmonious and enriched consumptions, and provide an elevated understanding of the interconnected nature of emotions within the culinary world.
