| Resumo: | Salta’s gastronomy has emerged as a relevant tourist attraction in recent years. This paper addresses the processes by which local food is promoted as a heritage attraction in this Argentinian province. This process was initiated as part of an official proposal that presents them as local legacy. The methodology involves the analysis and interpretation of a set of secondary sources (official documents and promotional material), as well as primary information (personal interviews with representatives of the Ministerio de Turismo y Deportes de Salta and with experts who took part in the official gastronomy initiatives). The results show details of the process by which the specificities of local gastronomy are defined by an alliance between tourist public policy and gastronomic experts in order to elaborate a provincial gastronomic “map”. |
